If you’re looking for a snack that feels refreshing, satisfying, and easy to grab on a busy day, these high protein lemon blueberry energy balls are a great option.
I love recipes like this because they check so many boxes. They’re naturally sweet, packed with fiber, contain healthy fats, and require no baking. They also store beautifully in the refrigerator, making them perfect for meal prep and those moments when hunger sneaks up unexpectedly.
The combination of bright lemon and sweet blueberries creates a flavor that’s light and refreshing, while the oats, almond butter, hemp seeds, and almonds help make these energy balls satisfying enough to keep you going between meals.

They’re a simple way to have a balanced snack ready whenever you need it.

1. Add the oats, dried blueberries, almond butter, Medjool dates, sliced almonds, hemp seeds, lemon zest, 6 tablespoons lemon juice, honey, and salt to a food processor.
2. Process until the mixture becomes sticky and begins to hold together. Scrape down the sides as needed to ensure everything is evenly combined.
3. Using a tablespoon or small cookie scoop, portion the mixture and roll into approximately 12 energy balls.
4. Place the energy balls on a parchment-lined plate or baking sheet.
5. In a small bowl, whisk together the confectioners’ sugar and remaining ¾ teaspoon lemon juice until smooth.
6. Drizzle the glaze over the energy balls or lightly coat them.
7. Sprinkle with the remaining 2 teaspoons dried blueberries.
8. Refrigerate for at least 30 minutes before serving.
9. Store in an airtight container in the refrigerator for up to 1 week.

One of the biggest reasons people experience energy crashes throughout the day is relying on snacks that are mostly carbohydrates without enough protein or healthy fats to help slow digestion.
These energy balls provide a more balanced option. The oats, dates, and blueberries offer natural carbohydrates for energy, while the almond butter, almonds, and hemp seeds provide protein and healthy fats to help keep you satisfied longer.
Having nourishing snacks prepared ahead of time can also reduce stress around food choices. When healthy options are readily available, it becomes much easier to support your energy, blood sugar, and overall well-being throughout the day.
These high protein lemon blueberry energy balls are bright, refreshing, and perfect for busy weeks when you need something quick and satisfying. They’re proof that simple ingredients can come together to create a snack that’s both nourishing and delicious.
If you make them, I’d love to hear when you enjoy them most — as a midday snack, post-workout bite, or part of your breakfast routine 💛.
