Directions

In a large bowl, combine the zucchini, yellow squash, red bell pepper, onion, and garlic.

In a separate bowl, whisk together the eggs, melted butter or ghee, and oil until smooth.

Add the flour, baking powder, parsley, sea salt, onion powder, and black pepper to the wet ingredients and stir until combined.
