  • 2 tablespoons confectioners’ sugar


Directions

1. Add the oats, dried blueberries, almond butter, Medjool dates, sliced almonds, hemp seeds, lemon zest, 6 tablespoons lemon juice, honey, and salt to a food processor.

2. Process until the mixture becomes sticky and begins to hold together. Scrape down the sides as needed to ensure everything is evenly combined.

3. Using a tablespoon or small cookie scoop, portion the mixture and roll into approximately 12 energy balls.

4. Place the energy balls on a parchment-lined plate or baking sheet.

5. In a small bowl, whisk together the confectioners’ sugar and remaining ¾ teaspoon lemon juice until smooth.

6. Drizzle the glaze over the energy balls or lightly coat them.

7. Sprinkle with the remaining 2 teaspoons dried blueberries.

8. Refrigerate for at least 30 minutes before serving.

9. Store in an airtight container in the refrigerator for up to 1 week.
