Ingredients

  • 1 onion, chopped
  • 2 tsp ghee
  • Half pound ground beef

  • 1 (16 Oz) jar/leftover marinara sauce
  • 1 (32 Oz) box beef or chicken broth
  • ¼ cup Pecorino Romano cheese
  • 1 tsp sea salt
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • ½ tsp hot pepper flakes, less for less heat
  • ½ box lasagna noodles
  • 2 cup fresh spinach/kale
  • Optional: ¼ cup heavy cream or coconut milk
  • Garnish: 1 TBSP ricotta cheese

Directions

  1. Chop 1 onion and saute in a large pan or Dutch oven with ghee over medium heat. When translucent add your meat and garlic. Cook until done. You may discard excess grease if there is any.
  2. Using the same pan, add tomato paste and mix. Add the tomato sauce and broth, stir. Then, add in your seasonings, stir.
  3. Add in spinach and lasagna noodles, mix. Place lid on pot and allow spinach to cook down and noodles to cook in the sauce, 7-10 minutes. You may use a no bake noodle or a traditional one. I use no bake GF noodles and they work great.
  4. For a creamier soup, add the milk of your choice. Garnish with a dollop of ricotta cheese. Enjoy this 30-minute recipe! Great for both kids and adults!
