Strawberry Cucumber Mint Salad

This quick, easy and fresh summer salad is sure to please any crowd! Add basil in place of mint or crumbled goat cheese as a fun variation! Enjoy this healthy salad!

Allergen Information:

Free from all major allergens. Option to add dairy.


Serving Size:

Approximately 4 cups


Ingredients:

  • 2 Cups fresh strawberries

  • 2 Cups fresh cucumbers

  • 1/3 Cup fresh mint

  • 1 TBSP extra virgin olive oil

  • 1 TBSP freshly squeezed lemon juice OR 2 drops Young Living Lemon Essential Oil

  • Optional: 1/2 cup crumbled goat cheese


Directions:

1. Clean (I used Young Living's Thieves Veggie Soak) and slice the strawberries and cucumbers. Toss into large mixing bowl. 2. Add the rest of the ingredients, mixing in the goat cheese in last, if using.


Notes:

1. Another variation to this dish includes adding fresh basil in place of the mint. 2. This dish is quick, easy, fresh and perfect for any picnic on a hot summer day! 3. Best made the day of serving.
