Ingredients:
1 dozen whole eggs
1 cup raw spinach
1 large sweet yellow onion, sliced thinly in rounds
1/2 cup pecorino Romano cheese
3 fresh basil leaves
3 fresh sage leaves
1 tsp fresh rosemary, minced
1/4 tsp kosher sea salt
1/4 tsp black pepper
1/3 rd cup ricotta cheese
Procedure:
Pre-heat oven to 350 degrees, then lightly grease a cast iron skillet or sauté pan.
Sauté onion and spinach in skillet until both cook down, approximately 6-8 minutes.
Next add the beaten eggs, along with the rest of the ingredients (EXCEPT the ricotta) in a bowl and whisk throughly.
Pour mixture on top of the onion and spinach right in the skillet or - transfer to a greased baking dish. Next drop ricotta on top of the egg mixture by the teaspoon and bake for 30-40 minutes, or until slightly golden
Allow to cool, then cut and serve with fresh sliced avocado, tomato slices or fresh bread. Great for large gatherings or just anytime.
If you don’t have fresh herbs, try dried.
