LOWER SUGAR BLUEBERRY OATMEAL BARS

Introduction:

Today, we are thrilled to share a deliciously wholesome treat with you: our Lower Sugar Blueberry Oatmeal Bars. Packed with the goodness of whole oats, fresh blueberries, and a touch of natural sweetness, these bars are perfect for satisfying your cravings without sacrificing your health goals. Whether you're looking for a quick breakfast on the go, a nutritious snack, or a healthy dessert, these bars have you covered. Serving Size: 1/10th of a piece


Ingredients:


1/2 cup shredded coconut unsweetened

1.5 cups whole wheat flour

1 cup minute oats

1/4 tsp salt

1/2 cup brown sugar or coconut sugar, leveled not packed

1 large egg

1/3 cup ghee or coconut oil, melted

2 tbsp. almond milk, unsweetened

3/4 cup blueberries

1 tsp ground cinnamon


Procedure:


  1. Preheat oven to 350 degrees. Lightly

  2. Combine dry ingredients in 1 bowl and mix. In separate bowl, combine liquid ingredients, mix.

  3. Stir wet ingredients into dry.

  4. In another bowl, lightly smash blueberries.

  5. Note: Reserve 1/2 to 3/4 oatmeal mixture to create a crumble topping.

  6. Using a ladle, carefully spread mashed blueberries onto oatmeal mix.

  7. Lastly, sprinkle the oatmeal crumble on top.

  8. Bake for approximately 20-30 minutes. Enjoy.
