Homemade Beefy Bone Broth

Yields approximately 8-10 cups. Freezes well in airtight container. Store no more than 2 months as histamine rises the longer broth is stored. 


Ingredients:


  • 3-4 pounds beef bones; shank, short tail or oxtail

  • 1 large onion, quartered

  • 3-4 medium sized carrots, cleaned with skin left on

  • 2-3 stalk celery, cut in half

  • 1-2 leeks or boy choy, cleaned and cut in half

  • 1 container mushrooms; variety of choice

  • 3-4 cloves garlic, minced

  • 1 TBSP apple cider vinegar

  • 1 tsp Kosher sea salt

  • 1 tsp black pepper

  • 12 cups water and more if needed


Procedure:


  1. Preheat oven to 450 degrees. Drizzle very lightly with a high heat safe oil for 30 minutes, salt and pepper. Turn meat over halfway through. Then transfer to the crockpot 

  2. Add beef bones and the rest of the ingredients to the crockpot. Fill with water. Cover.

  3. Cook crockpot on LOW for a minimum of 12 hours (up to 24 hours adding water as needed to ensure that liquid always covers the ingredients).

  4. Strain broth and transfer to a large container. Refrigerate overnight to allow the fat to rise to the top. 

  5. The next morning, skim to fat solid off of the top of the broth. Discard. The broth should be the consistency of a gel. Portion, store or use. Enjoy as a base to your favorite soup or sip as a beverage.
