Yields 12 standard-sized muffins. Store in air tight container or immediately freeze to enjoy later. 1 muffin is a serving.
Ingredients:
1 and 1/3rd nut butter of choice
2/3rd puréed pumpkin
4 eggs
1/4th cup local honey or pure maple syrup
2 TBSP pumpkin pie spice
1 TBSP pure vanilla extract
1 tsp baking soda
1/4th sea salt
2/3rd cup cocoa nibs or chocolate chips
Procedure:
Add ingredients, except the chocolate chips, in a blender and blend all ingredients until smooth and well combined.
Add the chocolate chips directly to the blender and stir gently with a spatula.
Pour into greased muffin tins (you can also use paper liners) and bake in oven at 375 degrees for approximately 15-20 minutes. *Take care not to overbake.
Allow to cool for 10 minutes on drying rack. Enjoy!
