This 1-serving egg bake comes together in a snap and delivers the nutrients you need to start your morning off right!


Ingredients:


  • 2 large eggs, beaten

  • 2 TBSP cottage cheese or sour cream

  • Cubed meat of choice (I used cubed turkey off the bone)

  • 1-2 tsp pecorino Romano or parmesan cheese, grated fine

  • Kosher sea salt and pepper to taste

  • OPTION: add beans, peas or lentils or any other leftover veggies of choice


Procedure:


  1. Lightly grease the inside of a 10-12 Oz mug. Then, crack the eggs and beat with a fork. Add the cottage cheese and parmesan. Toss in your add-in's; leftover veggies from dinner, beans or meat of choice. Season and stir.

  2. Place into the microwave on HIGH for 30 seconds. Check it. Stir. Then, place it back into the microwave for another 30 seconds. Stir it again. Finally, for a 3rd time, place it back in the microwave for another 30-45 seconds until it is cooked fully to your liking.

  • Southwest style: Add chopped tomatoes, green onions, a sprinkle of shredded cheddar, and a dash of hot sauce.
